The most vulnerable groups to Listeria monocytogenes are those with relatively weak disease resistance, including newborns, the elderly, pregnant women, and people with immune deficiency. The infection caused by it can cause meningitis, sepsis, Endocarditis, abortion of pregnant women, and even stillbirth of pregnant women. Fruits with low organic acid content are easily targeted. The main topic is not only watermelon, but also melon and papaya - because they are fruits with low organic acid content and are easily coveted and attacked by annoying pathogenic bacteria. Some scholars have conducted experiments on melons (including watermelon, melon, Hami melon and papaya) with low organic acid content. They "inoculated" a certain amount of Listeria monocytogenes and Salmonella on the flesh of these melons obtained under sterilization conditions, and cultured them at different temperatures and at different times to observe the reproduction of these two bacteria on the flesh of these melons. The final conclusion is: Salmonella: the higher the temperature and the longer the time, the more the number of Listeria monocytogenes; the lower the temperature and the longer the time, the more the number of reproduction.
