This city had a barbecue "three piece set" since the Han Dynasty, and the heroic barbecue style of our ancestors "ten waists and ten balls, shouting chili peppers and oil" has continued to this day. But what was the scene of ancient people eating barbecues like? The image record is hidden in the Han Dynasty stone carvings in Xuzhou. Chen Zhao, Deputy Director of the Office of the Chinese Painting Museum of Xuzhou Museum, told reporters that there is a "baking basin" in the main exhibition building of Xuzhou Museum, which is speculated to be used not only for heating by grilling, but also as a barbecue utensil. There is also a Han painting statue stone containing barbecue content in the main exhibition building, and there are four statue stones in the Han Painting Museum that also depict the scene of ancient people eating barbecue. The most typical one with records of barbecue cuisine is a Han Dynasty portrait stone from the Eastern Han Dynasty. This portrait stone was unearthed in Dongyan Village of Han Wang in Tongshan, with a height of 78cm, a width of 70cm, and a thickness of 25cm. It was carved using the technique of flat ground scraping and shallow relief. The screen is divided into three layers, with the top layer engraved with two people. The person in the middle is holding a long knife and cutting meat on the table. There are also some earcups and other utensils on the screen; The bottom layer is a scene of vehicles and horses traveling. In this Han Dynasty portrait stone, we can even clearly see that, similar to how we eat barbecue nowadays, lamb is one of the best choices for going to the oven. The person in the painting cuts the meat into pieces, skewers it on a stick, and then grills it over the fire, which is very different from our current way of eating. Although the cooking methods are similar, if we really travel back to the Han Dynasty, we may still not be accustomed to the Han Dynasty version of skewers. Chen Zhao introduced that compared to modern times, the cooking methods of the Han Dynasty are basically similar, but the taste is different from today. From archaeological and cultural data, the main reason is that there are not as many spices as there are now, Because at that time, the spices introduced from the Western Regions had not yet popularized throughout the country.
