The reporter learned from the State Administration for Market Regulation (State Standardization Administration) that the two recommended national standards, "Central Kitchen Construction Requirements" and "Central Kitchen Operation and Management Regulations", jointly formulated by the National Standardization Technical Committee of the Catering Service Industry and led by the China Hotel Association, have recently been approved and released, and will be implemented from October 1st. This is the first batch of national standards for central kitchens, marking the solid foundation for the dual standardization of hardware and management in China's central kitchens. As an important part of the deep processing of agricultural products and the deep integration of the first, second, and third industries in the industrialization of catering and food, the central kitchen has been highly valued. In April 2021, the Anti Food Waste Law of the People's Republic of China was officially released, which clearly stated that "catering service operators can use information technology to analyze their dining needs, and through the construction of central kitchens, distribution centers and other measures, scientifically manage food procurement, transportation, storage, processing, etc."; In 2023, the No. 1 central document proposed to "improve the standardization and normalization level of clean dishes, central kitchens and other industries". These two standards, as important supporting measures for implementing the Anti Food Waste Law, will provide standard specifications for the green, intensive, and intelligent development of the central kitchen, further curb food waste, and promote the healthy and high-quality development of the catering industry.
