French foie gras, caviar... The hidden local specialties of small county towns cannot be kept hidden anymore

These local specialties are affectionately referred to as "hidden" local specialties by people. 45% of the world's French foie gras is produced in small towns in China, hidden in the world cuisine. It is not unfamiliar in the Chinese dietary map, and braised foie gras is a well-known braised dish in the Chaoshan region. However, when it comes to "French foie gras", many people may associate it with keywords such as "France" and "high-end Western restaurants". In fact, 45% of the global French foie gras is now produced in China. The foie gras that people eat is likely produced in Huoqiu County, Anhui Province. In Hoxhau County, there are over 100 enterprises engaged in the breeding and processing of Lande geese introduced to France, producing over 5000 tons of goose fatty liver annually, making it the largest goose fatty liver production base in the country. At the beginning of this year, the Anhui Huoqiu local specialty "French foie gras", which became widely known through online "local specialty investigation", has actually quietly developed in China for more than 20 years. At that time, Hu Jianyuan was introduced from a French investment enterprise in Shandong. From exploring breeding and cultivation to product promotion, Hu Jianyuan learned to register companies and trademarks, and Huoqiu foie gras also developed its own brand, gradually expanding into the national market. In this round of local specialty network boom triggered by Harbin's cultural and tourism during this year's Spring Festival, various parts of the country have shown their confidence, and "Huoqiu Goose Fatty Liver" stands out from many local specialties. The high-end ingredients and the unknown small county town create a strong contrast and cuteness. Huoqiu Goose Fatty Liver also gained the opportunity to become famous through online traffic. Hu Jianyuan, President of the Water Poultry Branch of the China Animal Husbandry Association: Our foie gras has rapidly increased in popularity and sales have also increased by more than 30%. In recent years, the industry chain of Huoqiu foie gras has been continuously extended. In addition to selling fresh foie gras, they have also developed more than ten cooked food varieties and flavors such as red wine foie gras and rose foie gras, continuing to turn traffic into sales and making hidden styles popular. 60% of the world's caviar comes from China, with an annual production of up to 260 tons. Caviar is a high-end ingredient commonly used in Western cuisine, made by processing sturgeon roe. Previously, most of the caviar was produced in countries such as France and Belgium, but now China has become the world's largest producer and exporter of caviar, producing approximately 260 tons annually, supplying 60% of the global market. A caviar production enterprise in Tianquan County, Ya'an, Sichuan Province produced 60 tons of caviar in 2023, accounting for 23% of the national production. This industry originated from the enterprise's sturgeon farming more than a decade ago. With the help of the local agricultural department, the enterprise has accumulated experience through continuous trial and error, and the local government has also provided technical support to the enterprise with resources. At the same time, it has innovatively launched the development model of "shared fish ponds".
