People who eat fried food are more prone to anxiety and depression

Recently, a new study published in the Proceedings of the National Academy of Sciences (PNAS) found that eating fried foods and anxiety are associated with the onset of depression. Researchers analyzed data from 140000 people from the UK's biological bank. The data includes consumption of fried foods and the incidence of anxiety and depression over an average follow-up period of 11.3 years. They found that compared to people who do not consume fried food, those who consume more than one serving of fried food per day have a 12% higher risk of anxiety and a 7% higher risk of depression. Moreover, frequent consumers of fried foods are more likely to be men, young people, and active smokers. The researchers subsequently investigated the possible mechanisms underlying the relationship between fried foods and depression and anxiety. They found that exposing fish to low concentrations of acrylamide (fried food products) can trigger behaviors similar to anxiety and depression. Acrylamide can also reduce lipid metabolism, trigger neuroinflammation, and disrupt the permeability of the blood-brain barrier. Researchers say the significance of this study is that consuming more fried foods, especially potatoes, can lead to an increase in the concentration of acrylamide in the blood. The high concentration of this toxin can affect the function of brain nerve cells and may lead to depression and anxiety. These results are more pronounced among young people. Therefore, they suggest that the intake of fried foods such as french fries, fried potato pancakes, and bacon should be limited to "no more than one serving per month
