Here comes digital cooking! 3D printing cake with all colors, flavors, and flavors

An opinion article published on the 21st in the journal "npj food science" demonstrates a digital cooking method that uses edible food "ink" to create cheese cakes (including peanut butter, candy bar chocolate sauce, and strawberry jam) through a 3D printing system. The research team believes that accurate printing of multi-layer food allows people to create more customized food, improve food safety, and more easily control the nutritional content of food. Many cooking methods, such as using grills, ovens, stoves, and microwave ovens, require some manual operation, which heats a uniform entire area and can lead to inefficient heating. 3D food printing is just starting now, but due to its advantages such as customization and convenience, it may become increasingly popular. To demonstrate the potential of 3D food printing, the research team at Columbia University in the United States attempted to print various cheese cake designs, combining seven key ingredients: whole wheat biscuits, peanut butter, Nentoi chocolate sauce, banana puree, strawberry jam, cherry sauce, and frosting. They found that the most successful design and construction principles are similar, with wholemeal crackers as the basic ingredients for each layer of the cake, and peanut butter and Nentoi as the supporting layers to form pits to accommodate softer ingredients (bananas and jam). The research team believes that laser cooking and 3D printing of food can allow the chef to focus on aroma and texture at a millimeter scale, creating a new food experience. These technologies may make cooking more nutritious, convenient, and cost-effective because they use high energy, targeted light, and high-resolution customized heating. In addition, increasing emphasis is being placed on food safety, using less human manipulation for food preparation, or reducing the risk of transmission of food borne diseases. (Liao Xinshe)
