"Shui Jing Zhu" records: "in the Western Han Dynasty, the king of Huainan raised dozens of disciples of scholars, many immortals, the secret method of Hongbao, burning medicine and refining pills, and occasionally using gypsum to point bean juice to get tofu." It is also called "Bagongshan tofu" because it was invented in Bagongshan, Anhui Province. Huainan Wang had to eat tofu before he could refine pills. Later, he studied various ways to eat tofu. Over time, tofu spread among the people. Tofu is known as "Pepper milk", "Li Qi", "nephrite" and so on. Xie Yingfang, a beginner in the late Yuan and Ming Dynasties, also called tofu "Su Min", which integrates the insight of Buddhism and the health preservation of Taoism, and praised it as "the holy thing for the elderly". Min Min is originally the congealed fat on the crisp cheese. The color of tofu is white, tender and smooth, which is just consistent with Min Min's characteristics. In Buddhism, "Min Min Min filling the top" means to instill wisdom and make people fully aware. Xie Yingfang often attends Zen meditation with eminent monks in his old age. Tofu is cheap, good in quality, sharp in mouth, and has health preservation effect, which is deeply favored by scholars. It is said that Su Shi was demoted to Huangzhou as deputy envoy of tuanlian because of the Wutai poetry case. In fact, deputy envoy of tuanlian is an idle official with a job and no right. His salary is meager and his life is very simple. But how can Su Shi, who claims to be a "gourmet", have no food? So every time he treats guests, he always cooks in person and tries to make the most delicious food with the simplest ingredients. Tofu is cheap and often becomes something on his plate. Su Shi himself has a lot of research on cooking. After his hands, the ordinary tofu has become a delicious food on the tip of the tongue. Over time, people named it "Dongpo tofu". Although tofu is common, the process of making tofu is not simple. The production of tofu needs a series of complex processes such as soaking, grinding, filtering, pulping, refining and solidification. Without grinding, the essence is hard to come out. Without filtration, the waste is not clear; It is difficult to form without solidification. From bean to tofu, it is the process of grinding away the edges and corners, removing impurities, refining essence and solidifying molding, just like a person who becomes soft and tough from the hard edged, becomes the inner clarity from the mood, becomes the founder and the right form from loose slack. No wonder Hu Jicang, a poet in the Qing Dynasty, said that "faith and knowledge sharpen the spirit", so do beans and people. Tofu is square in shape and soft in heart. It does not avoid cold and heat. It has been tempered. It will always show people its cleanest face. No matter how it is cooked, it will always keep its original appearance. Revolutionist Qu Qiubai wrote in his suicide note "superfluous words": "Chinese tofu is also a delicious thing, the first in the world". He took tofu as a metaphor and made a final confession to his innocent and upright faith in life. Tofu entrance, innocent. It is this innocence that resists the cross flow material desire.
